Happy Thanksgiving

This year I certainly have a lot to be thankful for.  I have a wonderful and handsome husband, we have two beautiful boys.  My husband has a good job and is good at his job, which allows me to stay home to care for them.  We live in such a beautiful part of the country, in a nice home with a creek in the backyard and a view of the mountains in the winter.  We have our health, and friends, family, neighbors.  It’s always nice to have a day that “forces” you to think about what you are blessed with.  What are your blessings?

turkey babyAfter last year, Thanksgiving will never be the same for me.  I will always associate it with the birth of my second son (born 3:15AM on Thanksgiving morning).  And I’ll always call him my little turkey, not only because he was born that day, but because at 10lb 5oz he was bigger than our Thanksgiving turkey!

We grew up eating traditional Thanksgiving fare: turkey, stuffing, mashed potatoes, sweet potatoes, green bean casserole, cranberry sauce and rolls.  And don’t forget the gravy.  Or the pumpkin pie!  Extra whipped cream on mine!  Note for future years: add corn on the cob, ham and shrimp cocktail!

This year I’m going with pretty much the same.  However, because my husband is very picky about stuffing, I am leaving out the apples, raisins, mushrooms and walnuts.  I also found a really good looking recipe from the Crockpot Lady for pumpkin cheesecake in the crockpot.  Her picture looks so yummy and the recipe sounds pretty easy so I thought I’d try it.

I’ve been trying not to eat too much sugar today (or as much as I have been eating!) to avoid throwing off my pregnancy glucose test tomorrow morning. But all I can think about is cookies, chocolate bars, pudding, and ice cream! Baby wants cookies!

(These particular cookies are at least 6 months old)

Magic of Santa

Bean loves Santa! This week she’s been asking “Sing me a song! A Santa Song!” december-2007-009and we’ve been tuning in to the radio station that plays Christmas music all day long. (yes, already!) And so, it must be time to write that treasured letter to Santa.

This Christmas season, Macy’s has promised to donate $1 to the Make-a-Wish Foundation for every letter to Santa mailed in their “special letterboxes” at each of their stores. Visit their website, Macy’s Believe, for more information. Also from the website, you can download and print fun Santa Stationary to help your kid’s write a letter.

The 3 Kids N Us blog wants to encourage the giving spirit too. Pledge to write a letter and drop it off for a chance to win a $20 gift card to Macy’s at the Magic of Believing Giveaway.

Meal Plan Monday (er, Tuesday)

Another two weeks of meal plans… this time ahead of time!  I’ll try to add some recipe links as the week goes on.  Not too exciting but I wanted to get this posted for those who really want to see it!  (You’re welcome husband!)

Week One:
Monday– Cavatappi with spinach, beans, asiago cheese (from the Cooking Light Cookbook- I substituted Parm cheese and added some ham) note: my toddler downed this! spinach and all!
Tuesday– from the freezer- beef tips in wine sauce, brown rice, grilled peppers
Wednesday– something in the crockpot
Thursday– leftovers
Friday– eat out
Saturday– Birthday BBQ- hotdogs, hamburgers, brats, etc.  I’m planning on making a fire engine cake for the baby’s birthday (can you believe he’s ONE?) and a whiskey cake for our friends to try!
Sunday– leftovers (yes I know, leftovers twice, but there’s bound to be too many hot dogs left from yesterday)

Week Two:
Monday– Buffalo Chicken Nachos
Tuesday– Beef Stroganoff, broccoli
Wednesday– Seafood Chowder, corn bread
Friday– leftovers
Saturday– leftovers or pizza
Sunday– beef pot pie

Everyone seemed to be entering photos of their kids with messy faces. I have a ton of those! But I figured, the theme was food, fun and family.  To me this photo shows all three.  I love how both kids look like they can’t wait to get their hands on Dad’s cake.  Maybe it would have been a better photo if I had taken a picture of the ensuing mess?  Well at least a funnier photo!  But we’ll have more of those to come next week because the baby is turning ONE!!

Little Bo Peep has found her sheep!
