Meal Plan in MA ~Sept 26

Starting up again with some meal planning… I’m aiming to make more well-rounded meals and inspire my kids to ask for more exciting foods. So, I’m participating in the plan it ~Don’t Panic challenge. Be sure to visit her for some great ideas on making you own meal plans!


Today we’re also going to make some more applesauce in the slow cooker from the apples we picked earlier in the month. Don’t you love Mighty Man’s expression? He was the most efficient apple picker and would not rest until the bag was overflowing!

Our dinner plans for the week…

Monday: Emeril’s Turkey and Pinto Bean Chili (Food Everyday magazine, Sept. 2011)

Tuesday: “Andouille” Chicken Sausage with Red Bell Pepper Rice and Onions

Wednesday: Slow cooker split pea soup (Woman’s Day, Oct. 2011) and Grilled Cheese Sandwiches

Thursday: Spaghetti and Meatballs, French Cut Green Beans, Polenta

Friday: Baked Scallops, Asparagus Spears

Saturday: Slow Cooker Honey Glazed Chicken Thighs, tomato salad

Sunday: Mixed Munchies (aka leftovers!)





Menu Plan Monday in MA ~April 4

Baby could be here tomorrow, or in two weeks, so here is our flexible meal plan of 7 dinners… Most of the meals can be (or stay) frozen or put “on hold.”

Quick roasted chicken & potatoes (March issue of Everyday Food)

Chicken (leftovers) with Parmesan noodles, brocolli

Shaved beef sandwiches on french bread, salad


Ham Sandwiches on rolls [Made ahead and frozen individually. Put ham, cheese, and a little butter/mustard mixture on a roll. Perfect for the day-old bakery finds! Heat from frozen, still wrapped in foil, for about 20 minutes at 350F to melt the cheese]

Breaded fish fillets  and haricots verts (yes, just fancy green beans)

Hot dogs and home-made baked beans (Cooking these in the crockpot today. Will freeze in batches for eating later in the week/month.)

Spam frittata (spam cubes, potatoes cubes, black olives and eggs. We like the saltiness of spam, but real ham would work just fine.)

Menu Plan Monday March 21 (AK)

Photo Sharing and Video Hosting at PhotobucketLooking for a new recipe for salmon to go with the coconut rice recipe I wanted to try, I stumbled upon this gem: Thai Fish Cakes.  Luckily for me from recent attempts at Thai food (never as good as my friend Nancy makes) I had most of the ingredients to attempt this.

And I must say YUM!!  It was a hit and was gobbled up by the entire family.  Not that we need much incentive to eat salmon, but it’s always nice to find a new way to eat our freezer full!

And here is my menu plan for this week…

Monday: sausage gravy on noodles, leftover veggies
Tuesday: Shake ‘n Bake Ranch chicken and stuffing
Wednesday: slowcooker stew adapted from this recipe
Thursday: leftovers
Friday: trout, asparagus
Saturday: backstrap, brown rice pilaf
Sunday: salmon gyoza, yakisoba

Meal Plan March 7

Better late than never- the meal plan for this week!  Note, I did make it Monday morning but we have had extra kids this week so I haven’t had a chance to sit down to the computer to post.

Last week was a success and so far this week is shaping up that way too. 

So it looks like another yummy week.  Not too yummy though, because we are supposed to be sacrificing!  I can’t say I’m going to pare down my cooking for Lent since I’ve already pared it down because of the new baby. But for the next few weeks I’m going to try out new recipes that take advantage of what I already have on hand and we’ll see if I can’t pare down my pantry a little- use up all those items that got shoved to the back!

Monday:  Polish sausage stirfry, pierogies
Tuesday: Rabbit stew (yes, rabbit- from hubby’s winter hunting- this recipe turned out really good),  biscuits
Wednesday: Simple supper of soup and bread for Ash Wednesday (maybe trying a version of this recipe: Morocco’s Best Lentil Soup  Note: this soup was great!  It looked like “prison food” according to my husband, but it tasted very good and was even better the next day.  The bread was easy and good, but very crumbly.  Perfect with the soup though.
Thursday
: leftovers
Friday: Knights of Columbus fish supper
Saturday: buttermilk fried chicken (recipe cut out of a newspaper years ago and yet to be tried- I’ll post if it comes out)
Sunday: pizza

Meal Plan Monday returns to AK

While shopping at Michael’s the other day, I stumbled upon the “every calendar for 30 cents” display. They had a cute weekly planner that sticks to the fridge that I thought was perfect for planning meals and grocery lists. And so I am motivated again to get my meal plan made each week.

Here is what I am planning for the week. And a note to my husband- be flexible. I now have another interruption to contend with!

Monday: ribs, spicy mac ‘n cheese bake, salad
Tuesday: slow cooker sloppy joes, corn on the cob
Wednesday: leftovers
Thursday: turkey fajitas with homemade tortillas and rice
Friday: spicy pepperjack salmon
Saturday: chicken and dumplings
Sunday: brunch- salmon broccoli quiche
dinner- polish sausage and pierogies with grilled onions

Quick links to some valuable coupons for some tasty organic products…

Al fresco chicken sausage $1 off any one product (Coupon prints at top of page, nothing underneath. Press the back button to print twice!)

I love their apple variety…heat them up then slice in half lengthwise and crisp them up in a frying pan with a bit of olive oil. Yum, yum, yum!

Coleman Natural Meats Take the quick survey on their homepage and be rewarded by 5 $1 coupons for different products. If you print from the pop-up-menu, they’ll all print on two pages, in color.

Laura’s Lean Beef If you sign up for their email list on their homepage (first name, last initial and a zip code is sufficient) you can print a coupon for $1 off any product. (The coupon prints at the top, with an ad in the middle. Press the back button on your browser to print twice.)

Since meat freezes well, I always keep a lookout for organic meats approaching the sell by date that are reduced for quick sale. Just watch out for any very brown “red” meats and packages that look or smell funny. If it doesn’t look good now, it sure isn’t going to improve in the freezer!





Grocery Challenge: Start of Week 1

After a short break, I’m back with a little frugal culinary adventure. I’m participating in the All You Grocery Challenge to spend no more than $25 per person, per week, and still fix healthy, yummy meals. I hope the challenge will help me improve my meal-planning skills and give me a chance to hone my supermarket saving skills. It’s the third day of week one, and we’re off to a slow start, but doing well!

Here’s the tentative meal plan for the week:

Breakfast: cereal, fiber bars and yogurt that we have in the house both from stockpile sales and BJ’s. (Love BJ’s wholesale club since you can use coupons on their products too)

Lunch: Leftovers (will plan this better next week to “healthify” the options)

Dinners:
Sunday–Chicken & Rice (Added a box of rice from the pantry to chopped cooked chicken breast from the freezer, and a bit of leftover spaghetti sauce and cheese from the fridge.)

Monday–Leftovers from the weekend (had some takeout from Wright’s Chicken Farm for Father’s Day too)

Tuesday–Hamburgers (in freezer) & turkey burgers, mesclun salad from the garden, Vanessa’s burger buns (dough is resting in the fridge right now!)

Wednesday–Mustard Glazed Pork Chops, peas from freezer, salad from garden

Thursday–American Chop Suey (use leftover burgers from Tues), salad from the garden, canned pineapple from the pantry 

Friday–Pizza (homemade crust, will have to get some toppings later this week, or just make it cheese & broccoli)

Saturday–Hotdogs (from the freezer) and baked beans, salad from garden (have you noticed this salad is growing out of control?)

Grocery Trip Details:

Spent $26.20 on Monday evening to buy:
2.5 lbs pork ribs (B1G1 package)—Freeze for later
3 lbs boneless pork chops (B1G1 package)—Freeze 1/2, other for Wed. dinner
1 lb plainville turkey burgers (Used $5/$15 meat purchase Q)–for Tues nite
2 doz Eggland’s best eggs ($1.50 each after $.50/1 Q doubled)
steak sauce (free at PC this week!)
2 Cans of Goya Beans ($.65/each)
Can Spaghetti Sauce ($1)
2 frozen 100% juice concentrates
Store brand BBQ Sauce ($.25 after i-save coupon)
3-lb box Elbow Mac ($1.77)
2 8-oz packages Shredded Cheese (2/$3)
Green Pepper ($.77)

Week 1 Budget Remaining: $73.80

Need to go buy some more fruit and bread for PB&Js, since Bean isn’t digging chicken leftovers for lunch.





Meal Plan Monday- AK (week 2/4)

Last week went pretty well.  I mixed up some of the days toward the end of the week and ended up just cooking salmon on Friday.  Two new recipes to share with you- yesterday avocados were on sale so we made up some easy guacomole.  I also made some cake mix sugar cookies for a school snack that came out rather nice (they taste like Jiffy cookies).

So now we are on week 2.  It was really nice to look at my menu and give hubby a 4 item shopping list for the week!  Here is my schedule for this week and the rest of the month…
Week Two

Monday:  breakfast for dinner: sausage, pancakes, eggs

Tuesday:  Thai chicken curry, rice, springrolls

Wednesday: leftovers

Thursday: Hawaiin Mini Burgers

Friday: date night

Saturday: crockpot Chicken Marengo

Sunday: spaghetti and meatballs, green beans

Week Three

Monday: leftovers from birthday party or pizza

Tuesday: Cajun beans and rice

Wednesday: sausage and pepper sandwiches

Thursday: Holy Thursday- lamb

Friday: Good Friday- soup and bread

Saturday: Bud’s birthday (dinosaur theme)- pizza and sides

Sunday: Easter breakfast- hot cross buns, coffee cake, fruit salad, sausage, hard boiled eggs

Easter dinner: ham, rolls, salad, green beans, scalloped potatoes, lamb cake

Week Four

Monday: leftovers!

Tuesday: Creamy Tuscan Bean and Chicken Soup

Wednesday: sausage lasagna

Thursday: tacos

Friday: salmon gyoza, vegetable lo mein

Saturday: leftovers or eat out

Sunday: meatloaf

I had some free time last week so I decided to make up menu plans for the rest of the month (through Easter) so I could make a good shopping list for the commissary. And it wasn’t as hard as I thought it’d be.

Sunday: roast turkey, salad, broccoli rice, bread
Monday: turkey a-la-king
Tuesday: corned beef, cabbage, Irish soda bread
