I’m not happy about summer weather taking over my spring time! Looks like a week to reheat meals from the freezer and cook in the toaster oven. Arghh, another week without the microwave! It’s fate is in the hands of the Geek Squad as they make good on their appliance extended warranty… hope it comes back soon!

Monday: Pork fried rice (with leftover pork & veggies)
Tuesday: Quiche (already made!) & salad
Wednesday: Bratwurst & potatoes
Thursday: chicken ceasar salad
Friday: Fishsticks & veggies
Saturday: Microwave meal while hubby is off playing games—no wait, I keep forgetting there is no micro! 
Sunday: Leftovers

Menu Monday AK

Menu PlanningOh what a week we had last week! Two toddlers with every version of sickness between them (fever, ear infection, colds, and much more I won’t mention because this is supposed to be a post about food). My poor son- his third birthday was April 1st. He was so out of it most of the day and didn’t even want to eat any of his cake.

But I’m back on track for menu plans now! If you remember two weeks ago hubby was out of town so I endeavored to fill our freezer with ready made meals. This made last week easy and will make the coming two weeks easy as well (items in blue are from the freezer).  You can find more menu plans, recipes and dinner ideas at OrgJunkie.

This Week

Monday– surf and turf barbeque with friends (flank steak, salmon, halibut)
Tuesday– spaghetti and meatballs, garlic bread, green beans
Thursday– leftovers
Friday– dinner out
Saturdaysalmon enchiladas
Easter Sunday:
       Breakfast: eggs, sausage, hot cross buns, orange juice
       Dinner: we are probably going out with friends, but if we were eating here this is what I’d make…ham, scalloped potatoes, bacon and carmelized onion asparagus, Parker House rolls, orange cream salad, and lamb cake

Next Week

MondaySteak salad and baked potatoes
Tuesday– baked chicken, mashed potatoes, broccoli
Wednesdaymeatball sandwiches, baked beans
Thursday– Hamburger pizza ground beef, onions, jalapenos, tomatoes (on my half)
Friday– Girls night out! The boys are on their own.
Saturday– leftovers so the fridge is clean when we leave!

Menu Planning Monday- AK (Mar 23)

 This week hubby is going to be out of town, so dinners are going to be really simple.  I made up a plan to put a few meals in the freezer again too, since our stock was depleted except for salmon meals.  I’m going to pull a lot of moose burger out of the freezer, make a few meatloaves, meatballs (which were great the last time I made them- so easy to defrost a few for a quick lunch or snack).  And then cook a bunch up (with onions and garlic) for lasagna, stroganoff, taco meat and plain ground beef.  The plain ground beef will be good to have pre-cooked to add to pizza, spaghetti, etc. Here are a few links to some freezer meal plans… (be sure to check out the links page here)

I’m also going to try out pinto bean muffins.  Sounds gross, but so does zucchini bread (and I know that tastes good!).  A good way to sneak in veggies and protein!  See my post here for more links and ideas on using pinto beans. 

Monday– pasta with meat sauce, green beans (pasta- I’ll use up the leftover bits of pasta in the pantry- ones that won’t make a whole meal by themselves)

Tuesday– ham and lentil soup (funny tidbit- I found this web page after I cooked mine the same way!)

Wednesday– breakfast for dinner- eggs and pancakes

Thursday– leftovers

Friday– salmon alfredo (from the freezer)

Saturday– rolled steak with spinach, baked potatoes (recipe for steak from Cooking Light cookbook)

Sunday– grouse, rice, grilled peppers (grouse from the freezer)

Meal Plan Monday- AK (Mar 16)

 Happy St Patty’s Day!!!  One of my favorite holidays!  I do have a little Irish in me.  And I married an Irishman (red hair and all!) so we will definitely be celebrating this week.  I talked to Colleen and be both agreed that cooking the corned beef in the crockpot was the best way for both of us this year (sorry mom- I’ll try the pressure cooker next year).

It looks like this Thursday will be a great leftover day.  Last week we ended up making a homemade pizza since we didn’t have much left after making use of the steak for fajitas and devouring the chicken I cooked Wed.  I didn’t realize how easy it was to make my own pizza dough.  I forsee a lot more homemade pizzas now!

So, without further ado here is my plan for the week :

Monday– beans and rice or something of that nature- the black bean soup I tried to make yesterday wasn’t ready for dinner. I accidentally left it in the crockpot on high all night but it tastes OK so I am going to try to make something out of that.
Tuesday– corned beef (of course), cabbage, potatoes, irish soda bread
Wednesday– salmon enchiladas using a variation of this recipe
Thursday– leftovers
Fridaycrab flake toss, garlic bread
Saturday– meat ball sandwiches
Sunday– bbq meatloaf in schlemmertopf (I’m giving one more try before I totally write it off in favor of just using my crockpot)

Stop by later this week for a post on ways to use up 25# of pinto beans.  I promise I will get that up soon.  It’s mostly written!!  (And the check is in the mail!)

Meal Plan Monday- AK (Mar 2)

Here’s a quick post with my meal plan for the week… It’s easy stuff since I’m going to be babysitting more than usual. If I have free time I am planning on making some lunches to keep in the freezer for days there aren’t any leftovers for hubby to take to work. I’ll write more about that next week…

Monday- stew (from freezer), mashed potatoes, sourdough bread
Tuesday- chili, cornbread
Wednesday- spaghetti with meat sauce (leftover chili) green beans, garlic bread, salad
Thursday- leftovers
Friday- halibut, asparagus
Saturday- Polish sausage, pierogies, grilled onions and peppers
Sunday- Mimi’s sticky chicken (this recipe sounds yummy! I probably will adapt it to use chicken thighs from my freezer and make it in the crockpot)

I have to take a quick moment to just say that meal planning has been a sanity and money saver for me.  I can plan a shopping list a lot easier, and if I know what’s for dinner ahead of time I use free moments during the day to cook some of it up.  That saves a lot of frustration at dinner time when I have two toddlers clinging to my legs for food and attention.   Meal planning also helps us put a little variety into our menus.  I have gotten a lot of great recipe ideas both from reading others’ plans and from the researching I do to make up my own.

Menu Plan Monday- AK (Feb 23)

I can’t believe Lent is upon us already.  I’m still recovering from Christmas! 

I am going to have to start some new Mardi Gras traditions.  When I was working, a coworker used to bring paczki in every year.  I am going to miss that!  I am going to plan on making these donut muffins for breakfast but I may have to stop by the store and buy some- is there a Polish bakery in Alaska? We’re also thinking of inviting some friends over for dinner.  Even if we don’t, dessert is going to consist of all the chocolate in our house that we need to get rid of before Lent!  Maybe chocolate chunk brownies with chocolate icecream!!

mpmpencilMonday– Cheesy Macaroni Leftover Casserole (invented back in November, this turned out to be a good way to use leftover beef), carrots
Tuesday– Mardi Gras! BBQ pork ribs,  red beans, corn on the cob, and some kind of decadant dessert!
Wednesday– poached salmon filets, broccoli
Thursday– leftovers
FridayHalibut soft tacos
SaturdayBeef and Bean burritos
Sunday– Hot dogs and au gratin potatoes

This is looking to be a great week, yummy food and a very, very short shopping list! My shopping list so far is broccoli, avocados, onions, kidney beans, enchilada sauce and bread (unless I get around to making some today).

Menu Planning Monday

Menu PlanningIn sympathy with the new parents, last week I took a hiatus from cooking… except for Thursday when we had guests. I used up a lot of freezer meals- meatloaf, chicken curry, lasagna casserole. Thursday I made salmon quessadillas, Friday we went out to dinner and Saturday and Sunday were leftover leftovers!

This week I’m continuing the theme of easy meals and using pantry items so I don’t have to make a trip to the grocery store.  Using time I would have spent cooking, I have been getting caught up on cleaning and organizing some stuff around the house in anticipation for a huge garage sale in the spring.   Next week I plan on getting back into the kitchen- I need to make some more freezer meals.

Monday: Leftover pasta with meat and cheese, lima beans and corn
Tuesday: Hamburgers and au gratin potatoes
Wednesday: Roast with a side frozen mixed veggies
Thursday: barbeque beef sandwiches (sliced leftover roast warmed up in barbeque sauce), baked beans
Friday: fajitas (with leftover roast)
Saturday: roast chicken and rice
Sunday: something with the leftover chicken

Meal Plan Monday AK- midwinter crisis

Spring is coming!!! In about 4 months… At least they’re starting to stock seeds in the garden section of the stores now.

In the meantime we have been basically housebound since temperatures have been in the negative teens-20’s. That’s right MINUS 20! Before last weekend I had never experienced temperatures much below zero. When I first stepped out I thought “oh, it’s not so bad” but by the time I got to the car (about 20 yards away) my legs were numb. Thursday I had to schlep two kids to the doctor. Luckily I found a relatively close spot!

So in the spirit of winter eating, I’m planning a bunch of “warm-you-up” comfort food meals for next week (still trying to keep a healthy twist on them though- ie oven fried chicken).

Tuesday: pot roast with potatoes, onions and carrots
Wednesday: french onion soup, roast beef sandwiches
Thursday: fajitas (leftover pot roast, grilled peppers, brown rice, homemade tortillas)
Friday: polish sausage and pierogies
Saturday lunch: honey mustard turkey tortillas
Saturday dinner: slow cooker potato corn chowder, sourdough bread
Sunday: oven fried chicken, buttermilk bisquits, corn on the cob, green beans

OK, so it doesn’t look all that healthy but it does look yummy!  I’ll have to add an extra hour or two of “dance party,” the new game my two year old and I made up- silly dancing to Salsa music!

Meal Plan Monday- AK

Welcome to the holiday season!  I know we’ve been seeing Christmas decor in all the stores and hearing songs starting on the radio, but I see Advent as the official start.  We inherited a fake tree from a friend this year so we put that up Saturday night.  I used to abhor fake trees, but real ones cost over $40 these days, and they die in a week or so.  I’m liking ours already!

This week’s menu is simple because I won’t have a lot of time between doctor’s appointments and the baby’s surgery on Thursday.  It started snowing a lot more recently too, so I think this calls for a little comfort food (maybe lighter versions to make up for all the eating we did this past weekend!!)

Monday- lasagna casserole (from my freezer), garlic toast, salad
Tuesday- soup and grilled cheese sandwiches, mac & cheese
Wednesday- Crockpot Indonesion Chicken, broccoli, rice
Thursday- leftovers or whatever we can scrounge up (maybe leftover cake!?)
Friday- pizza
Saturday- something salmon (side note:  I need to find a new salmon recipe… we have enough salmon to eat every week, that wouldn’t be so bad if every time I made it we didn’t have to eat it for leftovers twice too!)
Sunday- Greek feta burgers and steak fries (both Cooking Light recipes)

I’m hoping for a quiet week to compensate for the craziness last week. Can you believe we’re in November already? I’ll be digging out some more comfort crockpot recipes for the weeks to come. Here’s our plan this week:

Monday–Spaghetti, garlic bread and broccoli
Tuesday–Burgers and Stars & Stripes Cookie Squares (Don’t forget to vote!)
Wednesday–Spinach Quiche (this was a hit last week, and easy to make)
Friday–Fish Stew
Saturday–Chicken Tortilla Chowder
Sunday–Out to eat with extended family
